Light, fluffy and cute as a button, these wee egg bites are ready in no time at all. Make them ahead of time for a grab and go breakfast or snack!
Here's what you'll need:
- 5 eggs
- 1 cup (30g) spinach, chopped
- ½ red pepper, diced
- ¼ cup (40g) feta cheese, crumbled
- 3 tbsp. almond milk, unsweetened
- salt & pepper
Here's how to make it:
Heat the Air Fryer to 150°C.
Whisk the eggs in a large bowl, add in the spinach, red pepper, crumbled feta, almond milk and season with a little salt and pepper.
Evenly divide the egg mixture into 8 silicone muffin cases, filling each cup ¾ of the way. Place the filled silicone cups into the Air Fryer and fry for 10-14 minutes. Do this in two batches if necessary.
Once cooked, allow the egg bites to cool completely before removing them from the cups.
