Air Fryer Zucchini Corn Fritters

Healthy brunch recipe



Summertime, and the livin’ is easy… especially when you have an Air Fryer and a great recipe! Filled with sweet corn, fresh zucchini, and a hint of satisfying Parmesan, these are so full of flavor, you’ll make them again and again! Plus, they're perfect for meal prep and popping into the freezer.


Here's what you'll need:

  • 2 medium zucchinis
  • 1 cup (160g) canned sweet corn
  • ¼ cup (25g) parmesan cheese, grated
  • 1 small onion, grated
  • 1 clove garlic, minced
  • 1 tbsp. dried parsley
  • ½ tsp. dried basil
  • ½ tsp. dried oregano
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • ¼ tsp. paprika
  • 2 eggs, beaten
  • 1 cup (120g) all-purpose flour
  • 1 tsp. baking powder


Here's how to make it:

    Shred the zucchini using the large holes on the grater and transfer onto a kitchen towel. Wrap the towel around the zucchini and squeeze out as much moisture as possible. Now place the zucchini into a large bowl.

    Add the sweetcorn, parmesan, onion, garlic, parsley, basil, oregano, salt, pepper, paprika and beaten eggs to the bowl, and stir to combine.

    Now add the flour and baking powder to the mixture, and stir until well combined. If the mixture is too wet, add a little more flour. The drier the zucchini, the less flour you'll need to use. Shape the mixture into 12 even sized patties.

    Place the patties onto a tray and place the tray into the freezer for around 5 to 8 minutes to firm the patties up a little. In the meantime, preheat the Air Fryer to 180°C.

    Working in batches, place the patties in the air fryer basket in a single layer and cook for 6 minutes, then flip over and continue cooking for a further 6-8 minutes, until golden. Continue cooking the fritters until all the batter has been used up.
