Here's what you'll need:
- olive oil cooking spray
- 1 tbsp. olive oil
- 1 large yellow onion, chopped
- salt & pepper
- 3 cloves garlic, minced
- 1 tbsp. rosemary, finely chopped
- 1 tsp. thyme leaves, chopped
- 900g ground turkey
- 80g breadcrumbs
- 120ml milk
- 2 tbsp. Worcestershire sauce
- 1 egg
- 80g tomato ketchup
- 2 tbsp. coconut sugar
Here's how to make it:
Preheat the oven to 160°C. Lightly grease a large deep baking dish with cooking spray.Heat the olive oil in a large skillet over a medium heat, add the onion and cook for 5 minutes until soft. Season with salt and pepper, then stir in the garlic and herbs. Cook for 1 minute until fragrant, then remove from heat and set aside to cool slightly.
Mix the ground turkey, breadcrumbs, milk, Worcestershire sauce, egg, and cooked vegetables together in a large bowl until well combined. Season with salt and pepper.
Add the turkey mixture to the prepared baking dish, and form the meat mixture into a loaf shape. Add the tomato ketchup and coconut sugar to a small bowl, mix to combine and brush over the loaf. Place the dish into the hot oven and bake for around 1 hour 20 minutes, until the meatloaf reaches an internal temperature of 71°C.
