Paprika Cheese Dip with Flaxseed Crackers

This incredibly flavourful dip is a wonderful way to trick yourself into eating more veggies! Serve with crunchy vegetables cut into sticks or flaxseed crackers for the ultimate high-protein, low-carb snack!


Here's what you'll need:

  • 225g strong cheddar cheese, shredded
  • 115g cream cheese
  • 4 tbsp. mayonnaise
  • 200g jar roasted red peppers, drained
  • 1 tsp. Salt

INSTRUCTIONS:

  1. Place half of the cheese into a food processor and add the cream cheese, mayo, peppers and salt. Whiz together until smooth and creamy.
  2. Transfer the mixture to a bowl, and add the remaining cheese, stir to combine. Cover the bowl and set the dip aside in the refrigerator to chill for 10 minutes before serving.

 


Flaxseed Crackers - Here's what you'll need:

  • 1 cup (135g) ground flaxseed
  • 2 tbsp. chia seeds
  • ½ tsp salt
  • 2 tsp. Italian seasoning
  • ½ cup (120ml) water

 

INSTRUCTIONS:

  1. Preheat the oven to 180°C. Prepare a large baking sheet lined with baking paper.
  2. Combine all dry ingredients together in a bowl and slowly add the water, mixing until a dough forms.
  3. Place the dough on the lined baking tray and using your fingers, press it out to an even layer ¼ inch (5mm) thick. If it breaks up just press it back together.
  4. Using a sharp knife, score the dough into the desired cracker shapes as this helps them to break evenly once they are baked and cooled.
  5. Place the tray into the hot oven and bake the crackers for 30-35 minutes. Remove the tray from the oven and set aside to cool completely, before breaking into individual crackers.
