Sesame Beef Coleslaw

Not only is this dish super tasty, it is also super convenient. Perfect for prepping in advance, or whipping up a family friendly meal when you're short on time. Top tip, use pre-shredded coleslaw mix for extra speedy meal prep!

 

Here's what you'll need:

  • 2 tbsp coconut oil
  • 450g lean ground beef
  • 2 garlic cloves, minced
  • 3 cups of green and red cabbage
  • 1 tbsp fish sauce
  • 2 tbsp toasted sesame oil
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 tbsp sesame seeds

 

INSTRUCTIONS

Add the coconut oil to a large frying pan or wok, on medium heat.

Once the oil is hot, add the ground beef and garlic. Stir and then cook for 10 minutes or until the beef is browned (do not drain).

Add the cabbage or coleslaw mix, fish sauce, sesame oil, soy sauce, salt and pepper to the pan. Stir and then cook for 5 minutes (until the cabbage is wilted).

Divide into 4 portions and sprinkle 1 teaspoon of sesame seeds over each.

Store in the fridge for up to 4 days.
