Here's what you'll need:
- ¼ cup 60ml olive oil
- 2 tbsp. red wine vinegar
- 1 tbsp. Dijon mustard
- ½ tbsp. lemon juice
- zest of 1 lemon
- salt & pepper
For the salad:
- 400g can cannellini beans, rinsed & drained
- 250g can tuna in spring water, drained
- 1 cup cherry tomatoes, halved
- 4 tbsp. basil, chopped
Here's how to make it:
Place all the ingredients for the dressing in a small bowl and whisk until well combined.Add the cannellini beans, tuna, tomatoes and basil to a large bowl, then toss to combine.
Pour the dressing over the salad and stir until well combined. Cover the bowl and place the salad in the refrigerator until ready to serve.
