WLS Friendly Recipe: Homemade Pecan Energy Bar


These chewy pecan energy bars are naturally sweet, packed with wholesome ingredients, and perfect for those moments you need a little pick me up, without reaching for the biscuit tin. 

INGREDIENTS
1 scoop MNT Whey Protein
250g medjool dates, pitted
115g pecans, halved
45g rolled oats
1 tbsp. chia seeds
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. salt


INSTRUCTIONS

Preheat your oven to 90°C and line a baking tray with baking paper.


Add the dates to a blender and whiz until they're finely chopped and starting to come together. Add the remaining ingredients and process again until you have a crumbly dough.


Tip the mixture onto the lined tray and press or roll it into a rectangle about 15 x 25 cm. Cut into 12 even bars before baking.


Bake for 30 minutes. They should be lightly golden but still a little soft in the middle. They'll firm up as they cool.


Transfer the bars to a wire rack and let them cool completely before tucking in.


Store in an airtight container in the fridge for up to 1 month. Perfect for lunchboxes, your handbag, or those "I just need something" moments.
